  1. 300 gms Carrots (grated).
  2. ¾ cup methi/fenugreek leaves (neatly washed and plucked).
  3. 1 medium onion (chopped).
  4. 2 green chilies (chopped).
  5. Salt- to taste.
  6. 1 pinch Turmeric pwd.
  7. 1 tsp red chilly pwd.
  8. 10 Curry leaves.

FOR TEMPERING:

  1. 2-3 tbsps oil.
  2. 1 tsp Cumin seeds.
  3. 1 tsp mustard seeds.
  4. 1 tsp split black gram (skin less).

METHOD:

  1. Heat oil in a nonstick pan, add cumin seeds, mustard seeds and split black gram and let them splutter.
  2. Add curry leaves, chopped onion and green chilies and sauté until transparent.
  3. Add 2 cups of grated carrots, salt and turmeric pwd and stir fry for 10- 15 minutes.

  4. Add methi (fenugreek leaves) and stir fry another 5-7 minutes.

  5. Add red chilly pwd and mix well. Transfer into a serving bowl.

Serve hot with roti or rice.
