Main ingredients: white brinjals (thella vankayalu) and mango.

Cooking time: 25- 30 minutes.

INGREDIENTS:

  1. 4 big white brinjals. (Cut into pieces and put into the salted water).

  2. 1 small mango. (peel and cut into small pieces).
  3. 1 medium onion (chopped).
  4. 2-3 green chilies (chopped).
  5. 2-3 tbsps oil.
  6. Salt- to taste.
  7. 1 pinch turmeric pwd.
  8. 1 tsp red chilly pwd.
  9. 5-7 Curry leaves
  10. ¾ -1 cup water.
  11. 2 flakes garlic (slightly crushed).

METHOD:

  1. Heat oil in a nonstick cooking pan on medium flame.
  2. Add garlic and saute, as it begin to change color, add chopped onion and green chilies, curry leaves, salt and turmeric pwd and saute  until transparent. Add brinjal pieces and saute for 5-7 minutes or until tender.

  3. Now add red chili pwd. Mix. Add water and simmer for 7-10 minutes or until the mixture thickens. Add mango pieces and mix.

  4.  Cover and simmer for just 3 minutes. Adjust salt. Transfer into a serving bowl.

Serve this delicious curry with rice or roti.
