KORAMENU IGRU

Main ingredients: korameenu fish fillets 10- 12(bullseye snakehead fish).      Cooking time: 30 minutes.

Serves- 4 people.

INGREDIENTS:

  1. 10- 12 korameenu fish fillets (neatly washed with salt and turmeric pwd and water).
  2. Salt- to taste.
  3. 4-5 tbsp oil.
  4. 2 medium onions (finely chopped).
  5. 4-5 green chilies (slit length wise).
  6. 1 pinch Turmeric pwd.
  7. 2 tbsp red chili pwd.
  8. 2 tbsp Coriander pwd.
  9. 1 tsp ginger garlic paste.
  10. ½ cup thick coconut paste.
  11. 1 tsp garam masala pwd. Or (roasted powder of 2 cloves, 1 cardamom, 1” cinnamon stick).
  12. ½ bunch coriander leaves (finely chopped).
  13. 3 cups water.

  • In a bowl combine the fish fillets along with salt, turmeric pwd, red chili pwd, ginger garlic paste, garam masala pwd, chopped onions, and green chilies and keep aside.

METHOD:

  1. Heat oil in a broad bottomed vessel on over medium flame. Place the fish fillets one by one.

  2. After a minute, turn them gently, and fry on the other side for 2 minutes.

  3. Add coconut paste, chopped coriander leaves, and water and mix gently.

  4. Bring it to a boil, reduce  flame, cover with lid and simmer for15 – 23 minutes or till you get the consistency of your choice.

Delicious korameenu iguru is ready to eat. Serve hot with rice.
