Veg pulav

Main ingredients: 1cup basmati rice, vegetables.

Preparation and cook time- 45 minutes (approx).

INGREDIENTS:

  1. 1 cup basmati rice (neatly washed and drained).
  2. 1 ½ cup water.
  3. 3 medium tomatoes. (chopped).
  4. 1 medium potato (diced).
  5. 1 medium onion (sliced).
  6. 4-5  green chilies (slit).
  7. 2 medium carrots (diced).
  8. 4 French beans (cut into 1” pieces).
  9. 1 small cup fresh peas.
  10. 1 small cup thick coconut milk.
  11. 1 tsp ginger garlic paste.
  12. 4 sprigs mint (plucked).
  13. 4 sprigs coriander leaves (chopped).
  14. 1 tbsp lemon juice.
  15. Salt- to taste.
  16. 1 pinch turmeric pwd.

FOR TEMPERING:

  1. 3- 4 tbsp ghee or oil.
  2. 2 bay leaves.
  3. 1”  cinnamon stick.
  4. 3-4 cloves.
  5. 1 cardamom.

METHOD:

  1. Heat  ghee or oil  in a small pressure cooker, add bay leaves, cinnamon stick, cardamom and cloves and mix for few seconds.

  2.  Add sliced onion, green chilies and ginger garlic paste and saute till fragrant. Except tomato add all above vegetables, salt and turmeric pwd and sauté for a minute.

  3. Add chopped tomatoes and sauté until tender.

  4. Add basmati rice, coconut milk and water and mix. Cover with lid and pressure cook up to 3 whistles.

  5. Leave stand for 5 minutes. Remove lid sprinkle chopped coriander leaves and drizzle lemon juice and mix. Serve hot with raitha.

  6. Delicious and spicy veg  pulov is ready to eat. Eat and enjoy with your family and friends.
