Main ingredients: carrots and grated coconut.

Preparation: 5 minutes.                                                  Cooking time: 15 minutes.

INGREDIENTS:

  1. 4 medium sized carrots. (finely chopped).
  2. 1 small cup grated coconut.
  3. 1 medium onion (chopped).
  4. 2 green chilies (chopped).
  5. 1 pinch Turmeric pwd.
  6. Salt- to taste.
  7. ½ tsp Red chili pwd.
  8. 2tbsp chopped coriander leaves.

FOR TEMPERING:

  1. 1 ½ tbsp oil.
  2. 1 red chili(tear into 2 pieces).(optional)
  3. 1 tsp cumin seeds.
  4. 1 tsp mustard seeds.
  5. 1 tsp black gram (skin less).
  6. 1 sprig  curry leaves.

METHOD:

  1. Heat oil in a frying pan, add red chilli, cumin seeds, mustard seeds and black gram. When they begin to splutter add curry leaves chopped onion, green chilies, chopped carrots, salt and turmeric pwd and mix.
  2. Stir fry for 7 – 10 minutes or till the mixture soften.

    Add grated coconut and stir for another 3 minutes. Add red chili pwd and chopped coriander leaves and mix well. Transfer into serving bowl.
