Main ingredients: white rice, fenugreek leaves and spices.

Cooking time: 15 minutes.

INGREDIENTS:

  1. 2 cups White rice
  2. 1 medium onion (sliced).
  3. 4-5 Green chilies (slit length wise).
  4. 2 tbsp Fresh peas.
  5. 2 tbsp French beans (cut into 1” piece).
  6. ½ cup Fresh fenugreek leaves (plucked).
  7. 1 medium tomato (chopped).
  8. 10 Mint leaves (optional).
  9. 1 medium potato (chopped).
  10. Spices (1cardamom, 3 cloves, 1”Sinnamon stick).
  11. ½ tsp Ginger garlic paste.
  12. 2 tbsp Fresh coriander leaves (chopped).
  13. 2 tbsp oil.

METHOD:

Heat oil in a wok, add spices and sauté for few seconds. Add chopped onion, green chilies, chopped potato, French beans, mint leaves, peas, turmeric pwd and salt and sauté for 3-5 minutes until the mixture tender.

Add ginger garlic paste, and fresh fenugreek leaves and sauté for 2 minutes.

Add chopped tomatoes and sauté until tender.

Now add chopped coriander leaves and white rice and mix everything well for a minute.

Turn off flame. Drizzle lemon juice and mix.

Serve warm with raitha.
