PURI CURRT INGREDIENTS:

  1. 2 medium sized potatoes- boiled, peeled and cubed.
  2. 1 medium sized carrot- chopped.(optional).
  3. 2 medium sized onions- chopped.
  4. 4 green chilies- sliced.
  5. 1 cup fresh green peas.
  6. Salt- to taste.
  7. 1 pinch turmeric powder.
  8. 3 tsp coriander leaves –chopped.
  9. 2 tbsp Bengal gram flour. (Add sufficient water to this flour and mix it well to get a consistent liquid).
  10. Water-2-2 ½ cups (approx).

FOR TEMPERING:

  1. Oil-2-3 tbsp.
  2. 1 tsp Black gram (skin less).
  3. 1tsp cumin seeds.
  4. 1 tsp mustard seeds.
  5. 10 curry leaves.

PURI INGREDIENTS:

  1. Whole wheat gram-1 ½ cup.
  2. Salt- to taste.
  3. 1 tbsp oil.
  4. Sufficient water to make dough.

METHOD:

  1. Heat oil in a non stick pan, add cumin seeds, mustard seeds and black gram and let them splutter.
  2. Add chopped onions, green chilies, salt and turmeric powder and sauté until tender.
  3. Add cubed potatoes, chopped carrots and sauté for 2-3 minutes.

  4. Add 2 cups of water and mix well and simmer for 5 minutes.
  5. Now add gram flour liquid and mix.

  6. Cook stirring continuously till the curry reaches to desired gravy consistency.

  1. To make puri, mix the whole wheat flour with 1 tbsp of oil, salt and sufficient water and knead into firm dough. Cover with a damp cloth and set aside for 15 minutes.
  2. Divide the dough into 10 equal balls and roll into 3-4 inches round puris.
  3. Heat oil in a frying pan and deep fry the puris on over medium heat. Drain and serve hot.
