Veg. fried rice (with left over rice).

Main ingredients: left over white rice, vegetables of your choice and spices.

Prepare time: 5 minutes. Cook time: 10 minutes.

INGREDIENTS:

  1. Left over white rice- 2cups.
  2. Oil- 1-2 tbsp.
  3. Spices- (3cloves, 1” cinnamon stick, 1 cardamom).
  4. Anise- ½ tsp (optional).
  5. Ginger garlic paste- ½ – ¾ tsp.
  6. Onion- 1 medium (chopped).
  7. Green chilies- 4 (slit).
  8. Tomatoes- 2 medium (cubed).
  9. Potato- 1 medium (chopped).
  10. Fresh green peas- 1 small cup.
  11. French beans- 1 small cup (chopped).
  12. Mint- 10 leaves. (optional)
  13. Coriander leaves-4 sprigs (chopped).

METHOD:

  1. Heat oil in a nonstick cooking pan on medium flame, add anise and spices and sauté for few seconds. Add chopped onion, chopped potato, fresh green peas, mint and French beans and stir fry for 3-5 minutes, till the vegetable bits tender.veg fried rice with left over white rice
