TOMATO MACARONI CURRY SERVING BOWL

INGREDIENTS:

  1. Cauliflower florets-1 cup (par boiled).
  2. Tomatoes- 7-9 medium (finely chopped).
  3. Macaroni – 1 cup (par boiled).
  4. Onion- 1 medium (chopped).
  5. Green chilies- 3-4 (chopped).
  6. Salt- to taste.
  7. Ginger garlic paste- ½ tsp.
  8. Water-2 cups.
  9. Coriander leaves- 4 sprigs. (chopped).
  10. Oil- 3-4 tbsp.
  11. Mustard seeds- ½ tbsp (optional).
  12. Cumin seeds- ½ tbsp (optional).
  13. Red chili pwd- ¾ tsp.
  14. Coriander pwd-1tbsp.
  15. garam masala pwd- ½ tsp.

METHOD:

  1. Heat oil in a nonstick cooking pan on medium heat, add cumin seeds and mustard seeds and let it splutter. Add chopped onion, green chilies and ginger garlic paste and sauté for a minute.
  2. Add chopped tomato, salt and turmeric pwd and keep it cover for 5 minutes.
  3. Then remove the lid, saute for about 5 minutes or until tender.
  4. Add par boiled cauliflower florets and sauté (gently) another 5 minutes.
  5. Add red chili pwd, garam masala pwd, coriander pwd and 2 cups of water and mix.
  6. Bring it to a boil, add parboiled macaroni and chopped coriander leaves and simmer for 5 minutes or till you get the consistency of your choice.

Serve warm with roti or rice.
