Main ingredients: Gherkins/ (dondakayalu), coconut.

Prepare time-10 minutes                                       Cooking time: 30 minutes.

INGREDIENTS:

  1. Gherkins/dondakayalu – ½ kg.
  2. Coconut- small piece. (cut in to small pieces).
  3. Ginger- ½ “piece. (Cut in to small pieces).
  4. Green chilies-4-6.
  5. Onion- 1 medium. (chopped).
  6. Salt- to taste.
  7. Turmeric powder- 1 pinch.
  8. Coriander leaves- 2 sprigs. (chopped).

FOR SEASONING:

  1. Oil- 3-4 tbsp.
  2. Mustard seeds- 1 tsp.
  3. Cumin seeds -1 tbsp.
  4. Split black gram (skin less)- 1tsp.
  5. Curry leaves- 1 sprig.

PREPARATION:

  • Remove out the gherkin ends, cut it into 2 halves and then cut each piece into 4 long pieces.
  • Grind coconut pieces along with chopped ginger and green chilies in to course. And keep aside.

COOKING INSTRUCTIONS:

  1. Heat oil in a frying pan on medium flame, add mustard seeds cumin seeds and spilt black gram. When they splutter, add curry leaves and chopped onion and sauté. Add gherkin pieces and stir fry for 15- 25 minutes or till they turn to light golden brown color.

    1. Now add coconut mixture and chopped coriander leaves and mix well. Sauté for a minute and transfer to a serving bowl.

      Serve hot with rice.
