Main ingredients: ridge gourd.        Cooking time: 30 minutes.

INGREDIENTS:

  1. Ridge gourd- ½ kg. (peeled and finely chopped).
  2. Milk- 1 cup.
  3. Salt- to taste.
  4. Turmeric powder- 1 pinch.
  5. Red chili powder- ½ tsp.
  6. Coriander leaves- 4 sprigs. (chopped).
  7. Onions- 2 medium. (chopped).
  8. Green chilies- 3 (chopped).

FOR SEASONING:

  1. Oil-2-3 tbsp.
  2. Mustard seeds- 1 tsp.
  3. Cumin seeds- ½ tsp.
  4. Spilt black gram (skin less)- 1 tsp.
  5. Curry leaves- 1 sprig.

    COOKING INSTRUCTIONS:

    1. Heat oil in a nonstick cooking pan on medium flame. Add cumin seeds, mustard seeds and spilt black gram and let them splutter.

      1. Add curry leaves chopped onion and green chilies, chopped ridge gourd, salt and turmeric powder and mix well. Stir fry till the oil separates. ridge gourd and milk curry preparation  ridge gourd and milk curry preparation
      2. Now add milk, red chili powder, chopped coriander leaves and ¼ cup of water and mix. Cover with lid and simmer for 5- 10 minutes or till the curry reaches to required gravy consistency.

Serve hot with rice or roti.
