Main ingredients: black gram (urad dal) and oil.   Prepare time:  15 minutes.

For 2-4 people.                                                                   Cook time: 20- 30 minutes.






  1. Black gram- 1 cup/ urad dal/ minappappu. (washed and soaked for 2- 3 hours and ground to a fine paste adding little water).
  2. Oil- needed for fry.
  3. Salt- to taste.


Heat oil in a deep bottomed frying pan. Apply little water on your palms and take big lemon size ball of urad batter, press slightly and put small hole in the middle of the vada. (as shown in the picture).



Drop slowly in the hot oil. You can add several vadas in the hot oil (as shown in the picture).

Now put the flame medium to high and wait until the vadas turn to crisp and golden. Once the color is achieved, turn the flame to slow and drain the vadas into a bowl. You can make the rest of the batter in the same process.

Another model of making vadas:

Place a small wet cloth or wet kerchief on a bowl and place big lemon sized urad batter on the cloth and press slightly, put small hole in the middle of the vada (urad batter), (as shown in the picture). Drop slowly in the hot oil. Deep fry them until crisp and golden color.

  1. As soon as you prepare the batter, cook immediately.
  2. If you don’t want to prepare immediately, keep the vada batter in the refrigerator.
