BITTER GOURD AND COCONUT FRY

INGREDIENTS:

  1. Bitter gourds- ½ kg. (pealed).
  2. Dried Coconut- ½ piece. (chopped).
  3. Salt- to taste.
  4. Oil- 3-4 tbsp.
  5. Onion – 1 big (chopped).
  6. Turmeric powder- ½ tsp.
  7. Cumin seeds- 1 tsp.
  8. Garlic cloves- 3-4.
  9. Red chilly powder- 2 tbsp.

For tempering:

  1. Mustard seeds- 1tsp. ria / aavaalu.
  2. Split black gram (skin less) – 2 tsp. /urad dal/ minappappu.
  3. Curry leaves- 2 strings.
  4. PREPARATION:
    1. Grind the coconut pieces along with cumin seeds, garlic cloves and red chilly powder into a course powder.  keep aside.

    2. Cut the pealed bitter gourds into 2 pieces and marinate along with                  salt and turmeric powder for 20 minutes. Then squeeze them.  And               set aside.

    COOKING INSTRUCTIONS:

    Heat the oil in a non stick frying pan on medium flame. Add the squeezed bitter gourd   pieces and stir fry for  10-15 minutes or till they turn to golden brown color. Remove them from the oil and set aside.

    Now add the cumin seeds and mustard seeds in the same frying pan. Let it splutter. Add curry leaves and chopped onion and saute till they turn to golden brown. Now add the fried bitter gourd pieces and grinded coconut powder and mix well.

    After a minute turn off flame and transfer into a serving bowl.                 Serve hot as a side dish with rasam or sambar.
