Main ingredients: ribbed gourd flakes.     Cook time: 25- 30 minutes.

RIBBED GOURD PICKLE (BEERAKAYA CHUTNEY)

INGREDIENTS:

  1. Ribbed gourd flakes- 1 cup. (peal 4 medium sized ribbed gourds for taking 1 cup of flakes).
  2. Ribbed gourd- ½ piece. (chopped into pieces with skin).
  3. Green chillies- 8-10.
  4. Tomatoes – 2. (chopped).
  5. Tamarind- big lemon size.
  6. Salt- to taste.
  7. Garlic cloves-3-4.
  8. Cumin seeds- 1tsp.
  9. Fresh coriander leaves- 3-4 sprigs (chopped).
  10. Oil-2 tbsp.

Preparation:

  1. Heat oil in  a  non  stick  frying  pan  on  medium  flame. Add green chillies, ribbed gourd flakes and chopped ribbed gourd. Stir fry for 10- 15 minutes or until the flakes turn to soften. Add chopped tomato and combine. cook covered on low heat  for 3 minutes. Remove from heat and leave it to cool.
  2. Grind the cumin seed, garlic cloves, salt and tamarind into course.  Now add the rest of the fried ribbed gourd mixture along with chopped coriander leaves and grind to a course paste. Transfer into the serving bowl and serve with hot rice and a dollop of ghee.
