INGREDIENTS:

  1. Bitter gourds- ¼ kg.
  2. Onions-  2 big size. (¼ kg).
  3. oil- 3-5 tbsp.
  4. Salt- to taste.
  5. Red chilly powder-1 tbsp.
  6. Turmeric powder- 1 tea spoon.
  7. Cumin seeds- 1 tsp.
  8. Garlic cloves- 3.

FOR TEMPERING/ TADAKA/ TAALIMPU:

  1. Cumin seeds/ jeera/ jeelakarra- 1/2  tsp.
  2. Split black gram (skin less) /urad dal/ minapappu- 1 tea spoon.
  3. Mustard seeds / ria/ aavaalu – 1 tsp.
  4. Curry leaves- 1 string.

    PREPARATION:

    1. Peal and split slightly (cut into 2 pieces, if necessary) the bitter gourds (as shown in the picture). And soak them along with salt and turmeric powder for 20 minutes. Now squeeze them and keep aside.
    2. Grind the chopped onions along with cumin seeds garlic cloves, little much salt, and red chilly powder to a course paste and keep aside.

      COOKING INSTRUCTINS:

      Heat oil in a frying pan on medium flame and add squeezed bitter gourds for 10- 15 minutes or till the bitter gourds turn to golden brown color. Drain and place them on a bowl. Keep aside.

      Put onion paste in the same frying pan and stir fry for 10-20 minutes or till the raw smell of the onion goes  away. Add  a little more oil if required. It becomes golden brown color. Now add the fried bitter gourds and curry leaves and sauté for a minute. Serve hot as a side dish of dal rasam or sambar.
