SWEET COCONUT PATTIES

 

INGREDIENTS:

  1. Raw rice-1 kg. (soak for 24 hours).
  2. Jaggery- ½ kg. (grated).
  3. Coconut-3 medium.(grated).
  4. Cardamom powder- ½  tsp.
  5. Water-1 cup- (200 gms).
  6. Oil- needed for deep frying.

PREPARATION:

Grind the soaked rice into a fine powder (use mix jar or flour mill).

Cooking instructions:

Pour some water in a heavy bottomed vessel, add grated jaggery and stir, until we get a concentrated Liquid. Now add grated coconut and stir for a few seconds. Turn off heat. Then add rice powder immediately and stir continuously without any lumps to make a stiff dough. Cover with lid and keep aside.

Grease your hands and divide the dough into big lemon size balls and flatten the dough into a circle shape (as shown in the picture).

Heat oil in a wide frying pan on medium flame. Deep fry them (one by one), until they turn to golden brown color. Remove from the oil and place them in a bowl.
