INGREDIENTS:

  1. Raw rice- 2 cups (wash and pressure cook the raw rice with 4 cups of water for 3 whistles).
  2. Tamarind-big lemon size. (extract juice in 1 cup of water).
  3. Salt- to taste.
  4. Turmeric powder- 1 tea spoon.
  5. Curry leaves- 1 strings.
  6. Fresh coriander leaves- 4 tbsp (finely chopped).
  7. Ground nuts- 2 tbsp.
  8. Jiggery- 1 tbsp (powdered).
  9. Green chilies-10 (split).
  10. Ginger- 1inch piece. (finely chopped).

FOR SEASONING:

  1. OIL- 2 Tbsp.
  2. Dried red chilies- 4 (cut into 2 pieces).
  3. Mustard seeds/ rai/ avaalu- 1 tsp.
  4. Split black gram (skin less)/ urad dal/ minappappu- 1 tsp.
  5. Split Bengal gram/ channa dal/ sanaga pappu- 1 tsp.
  6. Cashew nuts- 20.
  7. Asafoetida- ½ tsp.
  8. Curry leaves- 1 string.

COOKING INSTRUCTIONS:

To make tamarind mixture, put tamarind juice in a cooking pan, add ½ tea spoon turmeric powder, salt, finely chopped ginger, ground nuts, juggery, split green chilies. Cook them for about 5- 10 minutes on medium flame and keep aside.

To make seasoning, heat 1 tbsp of oil in a small frying pan on medium heat. Add red chilies, mustard seeds, split Bengal gram. Split black gram and cashew nuts, let them splutter, add asafoetida and 1 string of curry leaves. Off the stove and keep a side

PREPARATION OF PLIHORA

Place the cooked rice in a wide bowl, add remaining 1 tbsp oil, remaining curry leaves and remaining ½tsp. Turmeric powder and combine.

Now add cooked tamarind mixture and seasoning, and mix everything well.  Garnish with chopped coriander leaves.
