Serving bowl of Amaranth and fenuegreek fry

AMARANTH AND FENUGREEK FRY

Main ingredients- amaranth and fenugreek leaves.

Prepare time- 5 minutes.   Cook time: 15 minutes.

For 2-3  people.

INGREDIENTS:

  1. Amaranth- 4 Medium bunches / thotakoora. (neatly washed and chopped).
  2. Fenugreek leaves-2-4 small bunches /menthi koora. (neatly washed and chopped).
  3. Salt- to taste. (chopped).
  4. Turmeric powder- 1 pinch.
  5. Onion- 1 medium (chopped).

FOR TEMPERING:

  1. Oil- 2 table spoons.
  2. Red chilies-4 (tear into 2 pieces)
  3. Garlic cloves- 2 (slightly crushed).
  4. Mustard seeds- 1 tea spoon /rai/ aavaalu.
  5. Cumin seeds- tea spoon/ jeera/ jeelakarra.
  6. Split black gram (skin less)- 1 tea spoon./urad dal/ minappappu.
  7. Split Bengal gram (skin less)- 1 tea spoon/ sanaga pappu.
  8. 1 sprig curry leaves.

COOKING INSTRUCIONS:

Heat oil in a non-stick frying pan on simmer. Add red chilies and crushed garlic cloves, saute till lightly browned.

Add mustard seeds, cumin seeds, split black gram, split bengal gram and let them splutter. Add curry leaves and chopped onions and saute 30 seconds.

Add chopped amaranth and fenugreek leaves, salt and turmeric powder.

Stir fry for 15- 20 minutes on low flame. Remove from heat and serve hot.
